Vitulus, The Milk Fed Finest Veal
Italian dairy veal from the Po Valley. Silky texture, light and velvety flavor.
The tradition of calf farming in Italy dates back to ancient times—so much so that some etymological studies suggest the very name Italy derives from Víteliú, meaning “land of young bovines.” Today, the heart of Italian white veal production lies in the fertile Po Valley, home to the country’s most important dairy farms.
Here, male calves of the Frisona Italiana breed—renowned for producing milk used in iconic cheeses like Parmigiano Reggiano and Grana Padano—are raised with care to produce premium white veal. Thanks to their genetic traits and balanced milk-based diet, this veal offers exceptional nutritional value:
- High in protein
- Low in fat – about half the fat of adult cattle
- Rich in calcium – nearly three times more than adult beef
- High in essential minerals – including phosphorus, magnesium, and iron
Italian white veal is a true expression of tradition, nutrition, and the excellence of controlled farming.
